Get a Shoemaker Fix Without Turning on the Oven
Sweet summer fruit in a buttery crust is one of the many great gifts of the season, but turning on the oven is obviously the opposite of what anyone wants to be when it’s as hell hot outside.
It’s warm week and we’re on fire! The heat and humidity hit our heads, and all we can think about is getting into the pool and staying there until September. But since we got work to do, damn it, here’s the summer content you crave so much, from the finest icy cocktails to not toasting in the summer sun, we’ve got your (sweaty) back on your toes.
Fortunately, you can cook a small cobbler in less than five minutes, within the confines of your microwave. It works with just about any fruit, although I am partial to berries that require no preparation other than washing. To make your bowl of sweet summer fruit with warm cookie filling, you’ll need:
- 1/2 cup of your favorite fruits, sliced as needed (I’m looking at you stone fruits).
- 1 tablespoon + 1 teaspoon white sugar
- 1 teaspoon cornstarch
- 1/4 teaspoon vanilla
- 1/4 cup baking mixture (such as Bisquick)
- 1 tablespoon milk
Combine fruit, one tablespoon sugar, cornstarch, and vanilla in a mug or mold, keeping in mind that the fruit can bubble, so the taller the sides of your jar, the better. In a separate small bowl, combine the baking mixture, remaining sugar and milk to make a dough, and place the dough on top of the fruit. Cook in the microwave for 90 seconds to two minutes, until the fruit starts bubbling. Sprinkle with cinnamon and serve with ice cream, whipped cream, or just a glass of very cold milk.
