Plant Sprouted Garlic Bulbs and Eat Greens

When the garlic has sprouted, it’s too bitter to eat, but that doesn’t mean you should throw it away. Bury it in potting soil and give it some sun and you can eat delicious green garlic in just a week.

This is part of the Lifehacker Eating Trash With Claire series in which Claire Lower convinces you to turn your kitchen waste into something edible and tasty.

Historically, I am very bad at factories, but even I can implement this project. All you have to do is peel off the cloves, leaving a papery crust on them.

Then take a pot and fill it with potting soil, leaving about an inch of space at the top. Place two or three carnations in the soil with the sprouted end up, and cover the rest with earth. It’s okay if you cover the sprouted part; it will eventually break through on its own.

Keep the soil moist, but not wet, and you should see green sprouts of garlic within a week or so. You won’t get a whole head of garlic, but this delicious green onion can be used in the same way as chives or garlic. I especially like baked potatoes or grilled ones along with flaky fish, but there really isn’t a savory dish that doesn’t benefit from the mild garlic flavor.
