Make One-Ingredient Caramel Sauce in an Instant Pot
Using a multicooker or pressure cooker to turn a can of sweetened condensed milk into a rich caramel sauce has long been my favorite trick. There is no mixing or measuring, but (obviously) a lot of dairy products. It might seem like it makes our vegans and lactose intolerant friends feel cold without caramel, but I’m happy to inform you that you can do the same with a can of sweetened condensed coconut milk.
Pressure Cooking is the fastest way to reach your sweet goal. If you are using the Instant Pot, simply add a cup of water to the insert and place the entire jar in the pot on the rack. Cook on high pressure for 45 minutes, let the jar settle naturally, and let the jar cool completely before opening it to expose the rich golden sauce inside.
If you are a fan of Samoa Girl Scout cookies, also known as “the best Girl Scout cookies,” then you will be happy to know that this is exactly what this caramel sauce is like: sweet, buttery, rich and flavored with a hit of coconut flavor. Suitable for ice cream, cakes and biscuits. Suitable for apples and pears. It’s good right off the bat.
