If You Run Out of Vanilla Extract, Use Dark Liquor Instead.
Vanilla is a ubiquitous ingredient found in almost every recipe for every baked goods ever made, but if you’re not making a vanilla treat with a lot of extract, you can add some bourbon or dark rum.
As Emma LaPerrouck explains at Food52, the main purpose of the capsule-filled whey is to give it a little complexity and depth. If your recipe requires only a tiny amount – a teaspoon or less – a little dark drink can do the same. Lappok recommends using black liquor with a “strong personality”, such as bourbon or rum, but I can not wait to play with some bittersweet Amari such as Cynar or Nonino. Just remember to double your dosage; if your recipe requires a teaspoon, use two.
