Turn Canned Cranberry Sauce Into Delicious Effervescent Cubes
I know there are canned cranberry sauce haters out there. I don’t know any of them personally, but I do know that they are not fascinated by the little wavy lines or surprised by the sound it makes when exiting the can. But even they would be conquered by those cubes of chilled, frozen cranberry sauce, because these cubes are carbonated .
Designed by ChefSteps, these little effervescent cranberry wonder squares are very easy to make, especially if you have a whisk siphon. Aside from a siphon (and two CO2 cartridges), all you need is a can of chilled cranberry sauce and some water.
Cut the sauce into pieces and add them to the siphon of water. Charge the siphon with two cartridges, then place it in the refrigerator for at least two hours. Release the gas and gently pour the bubbling cubes into a serving bowl. (They are great for party cocktails.) No siphon? Don’t worry, you can still cook them with dry ice ( ChefSteps can show you how here ).
