The Secret to Making Boneless Chicken Wings Is That They Are Not (Wings)
Maybe I was naive, but I always thought of boneless wings … wings? I never really thought much about how they became boneless, but I’m not a butcher, so why should I worry about that? But then I came across a recipe for making boneless wings at home, and, well, I was shaking a little.
It turned out that “boneless chicken wings” are “pieces of chicken breast fried in breadcrumbs, seasoned like chicken wings.” For example: these are large chicken nuggets. Did you shake a little too? (Please do not write me in the comments if this is not the case.)
The good news here is that since boneless wings don’t require any bone removal at all, they’re very easy to make at home – or, if you’ve done something like this, you no longer need to tell older guests that you are serving them chicken nuggets.
This epic recipe has at least the decency to put the words “wings” in chilling quotes. Kitchn has a recipe for boneless baked wings using panko and roast for a crispy crust without frying. They are still tossed in barbecue or buffalo sauce and show no bones, skin or wings.
