Baked Treats That Can Be Made From One Bowl and Spoon

I love the oven, but my hand mixer sits on a very high shelf and even when it is lowered it is so intimidating – splashes, cord tangles, twisted parts that need to be washed. That’s why I’m committed to these two recipes, which don’t require anything more high-tech than a bowl and spoon.

Trick: Both rely on ghee. (I use a microwave-safe mixing bowl and just melt the butter in it, although you can also use a double boiler.) When baking sweets, an electric mixer is usually designed to whisk butter and sugar , and the result is a process. in a light fluffy base for your recipe. But when the butter is melted, it easily converts to sugar, requiring no electrical or muscle energy. (I know you can technically butter with a spoon or whisk by hand, but come on.)

This Epicurious brownie recipe allegedly belongs to Katharine Hepburn. It uses chocolate for baking instead of cocoa and almost all of the flour, giving you thick, fluffy brownies that are even better on a little less. (Start testing them after about 20 minutes.) They also easily adapt to gluten-free – I’ve had great results replacing ¼ cup flour with ⅛ coconut flour.
