What Should We Do Next?
Hello sous-vide friends, and welcome back to yet another exciting session ofWill It Sous Vide? , the column where I do whatever you want with my immersion circulator.
The bread project upset me last week and filled my mouth with sticky shame, so I wouldn’t mind if we picked a delicious treat this week. As always, there are suggestions:
- Lamb Neck: Yes, I know this is kind of a given, but think of any food porn you enjoy.
- Another cheese: I think a sous-vide mozzarella would be a fun project and a little more interesting than our other crappy beginnings .
- Steamed buns: I know I didn’t say bread anymore, but it could be different. (I want things to be different.)
- Fermented pickles: or sauerkraut? Or some other fermented product?
- Delicate seafood: perhaps a scallop? Or maybe shrimps?
