The Secret to Keeping Tomatoes Fresh
One of my favorite parts of summer is to eat my weight in tomato sandwiches, but I can overdo it a little and end up with too many mothers. Luckily, Serious Eats’ J. Kenji Lopez-Alt has several ways to keep my favorite summer food fresh.
As Kenji explains in the link below, most of the moisture in tomatoes comes out of the stem, and keeping them upside down on a flat surface can help prevent this. This is great advice if you have enough room in your fridge for a whole plate of tomatoes, but not all. But don’t worry – there is a quick fix. Just cover the stem with tape, after removing all the leaves. The tape will prevent the loss of precious moisture and keep your tomatoes firm, plump, and juicy until you’re ready for your next tomato sandwich.
