Happy Hour With 3 Ingredients: Super Fresh Pineapple Daiquiri
Happy weekend and welcome back to Happy 3 Ingredient Hour , a weekly drinks column featuring very simple yet delicious libations. This week we are making a truly tropical daiquiri with fresh pineapple.
While daiquiri is sometimes referred to as a super-sweet, blended monster, the truth is that it is a very simple three-way drink made from rum, lime juice and simple syrup. To replicate pineapple, all you have to do is replace the juice. However, in order to maintain the acid level in this drink, the pineapple juice must be fresh or the drink will taste sad and flat. Fortunately, making your own juice is easy; you just need a blender (a stick blender will do as well). After you figure out the blender situation, you will need to collect the following:
- 1 cup fresh pineapple chunks
- 2 ounces of your favorite light rum (I love Plantation 3 Star because it’s good and usually costs around $ 17).
- 30 grams simple syrup made from equal parts water and turbinado sugar
Whisk the pineapple in a blender until completely dissolved (the thinner the puree, the more liquid there will be in your drink). Add two ounces of fresh juicy puree, two ounces of rum, and 30 grams of plain to the shaker. Fill a shaker with ice, shake, strain in the compartment and enjoy the sun. (Pro tip: If you shake it vigorously, a nice frothy foam will appear at the top – no egg white needed.)
