Will It Be Sous Vide? Let’s Pick a Different Theme!
Hello friends, and welcome back to yet another session on topic picking forWill It Sous Vide? , a weekly column where I do whatever you want with my immersion circulator.
Last week, after informing me that he had no snails to buy, a butcher at a snobbish grocery store near me leaned over slightly and told me in a slightly conspiratorial tone that he had “something that might interest me.” Then he took me to the freezer and presented me with a bag of alligator meat. Obviously I bought it and I hope you guys are as excited about the sous-vide gator idea as I am. If not, here are some more ideas:
- Custard Ice Cream Base: The sun is finally out, so I can feel it.
- Pork Loin: We made chops and they were fantastic. I am sure that the result will be the most delicious and juicy loin.
- Duck Confit: We haven’t actually made any duck yet, which is pretty amazing.
Actually, I just want to see some alligator. I haven’t had a good alligator in years.
