This Two-Ingredient Dish Will Help You Clean the Refrigerator.
You know that awkward moment in your fridge when you still have food in it, but are they all 1/2 cup servings of various leftovers and like one carrot? This moment is annoying because you still have food to eat and to eat, but just nothing that can be combined into a coherent whole. Fortunately, at this point I have a dish: eggs and rice.
In the simplest case, the dish is just an egg – either poached or fried, but the yolk must be liquid – served on a pad of rice. It’s pretty good on its own, especially with a little soy sauce and chili paste, but it’s also the perfect medium for turning random fridge nibs into a dish that makes (at least some) sense. It’s also very cheap, and you probably already have eggs in your refrigerator and rice in your pantry.
Here you toss in the last bite of cashew chicken, one carrot (chop or shred first), a quarter of an onion, and those fresh herbs that are about to turn over. This is where the leftover vegetables and chips should go. Are there any occasional dipping sauce leftovers after take-out meals? Add these as well. I even scraped off the inside of the remaining half burrito (it was originally a very large burrito), mixed it with fresh rice and laid it on this perfect egg with the sunny side up for a delicious result. The only limitations for eggs and rice are limitations in your own mind.
