Your Immersion Circulator Is Also an Excellent Wine Cooler

I was picking out a slightly overpriced bottle of champagne the other day to take to a friend when I realized the bottle I was staying for hadn’t arrived chilled. Luckily, the store had a wine cooler – a whirlpool water bath that chilled my champagne to serving temperature in a matter of minutes. “I wish I had one of them at home,” I thought, not realizing what I had already done.

If you have an immersion circulator,you probably use it to make all kinds of delicious sous videtreats , but this kid can cool as well as cook. Just set the circulator as low as possible – my Anova will go down to 32 ℉ – and add a few ice cubes to make it fall. When the bath is pleasant and cold, set the bottle of the drink you intend to drink on for 10 minutes or so. Remove it, dry the bottle and serve.
