Turn Leftover Cookies Into Crunchy Flavored Croutons
These fluffy buttery cookies aren’t useless if they start to get stale. They make amazing croutons that can be added to salads and other dishes.
Kelly Foster of The Kitchn offers just a little olive oil and a little salt to turn this hardcake into a batch of toast on the stove. Start by cutting the cookies into small cubes. Then heat 2 tablespoons olive oil in a large skillet or skillet over medium to high heat. Add the cookie pieces to the baking pan, sprinkle with salt and stir until the butter covers all the pieces. When the croutons are toasted, they can be served or stored. If you have a large batch, you can store them in the freezer for up to 6 months until you need them.
