Use Extra Celery As a Salad Base

Many recipes use celery, but usually it’s just one or two stalks and you’re left with a whole bunch of gooey green sticks to use up. Fortunately, Bon Appetit has many uses for it, none of which involve ants or logs.

Tuna broth and salad are obvious choices, but if you want to try something a little different, use leftover celery as a salad base. First, you need to remove all those annoying little fibrous pieces, which is easy with a Y-shaped peeler . Simply run your knife along the outer edge of the celery until it comes off the thread. Then continue with your knife, slicing the stems into a bunch of celery ribbons for a crispy, hearty salad. Add the dressing, protein, and maybe nuts to them, and you eat. Personally, I would go for blue cheese sauce, bonus points if there is buffalo chicken.
