Japanese Gut Fish With Chopsticks

If you need to gut a fresh daily catch, all you need is a pair of chopsticks. Warning : you will literally see the intestines of the fish ripped out of the mouth.

This gutting technique, demonstrated in the video above from the Morigami YouTube channel , removes the guts and gills of a fish without having to cut them open or remove the head. Take a couple of disposable chopsticks and insert them into the fish’s mouth past the gills, twist the chopsticks slightly, then slowly pull the insides out through the mouth. Rinse the inside of the fish with water and it will be ready to cook or freeze for later use.

This method of cleaning fish is known in Japan as the tsubo-nuki technique and ispopular in many parts of East Asia . This is ideal when serving whole fish or simply tossing it on the grill, because the body stays intact and keeps its shape perfectly during cooking. You also avoid accidental cuts in the digestive tract or other organs of the fish, which may require additional cleaning.
