Use Muffin Tins to Bake More Delicious and Delicious Cookies
Cookies are a great last minute gift. In fact, it’s a great gift, period . And if you want a more professional looking homemade cookie, all you need is a muffin pan.
In Epicurious, baker Dori Greenspan explains how she discovered a way to bake smoother, more professional-looking cookies at her bakery. She used metal rings to stitch them together, giving them straight edges, but they tasted better as well. Greenspan told Epicurious:
“Left to their own devices, the cookies would spread, but here they had to grow in their tiny houses and get crisper around the edges, which I really liked.”
If you want to try this at home, you can bake the dough in the bottom of the muffin tins, Greenspan advises. Epicurious explains how it’s done.
The technique couldn’t be simpler – just scoop up the cookie dough with a 2 tablespoon standard cookie dough spoon or use a spoon. “Most cookies have enough butter so the muffin pan doesn’t need to be spread,” says Greenspan. “Then use a small jar with plastic wrap to press down on the surface.”… The heat of the oven will do the rest. Bake the cookies as directed in the recipe, checking them a couple of minutes earlier than usual.
