Make It Easy to Dice the Bacon by Freezing It Quickly
Bacon, in all its delicious beauty, is a slippery ingredient. A little time in the freezer will make things much easier.
If your recipe includes diced bacon or other fatty meats, Serious Eats’ Daniel Gritzer recommends freezing it quickly before dicing. 10 to 15 minutes will do. You don’t want to completely freeze the bacon fat, just make it harden to a working condition. You can now grip the meat better, and the knife has something hard to cut through. Of course, if you’re already storing bacon in the freezer , you can defrost the bacon on an aluminum baking sheet for a few minutes, until it’s tender.
