Why You Should Roll Out Cookie Dough Before Chilling It
Chilling the dough is a necessary step when making cut sugar cookies, but rolling out a super-hard disk from cold dough can be a bit tricky. To save a lot of work (and some time), its roll before cool down.
As Food 52 explains in the link below, putting the dough in the refrigerator keeps the butter nice and firm (which prevents it from sticking to the work surface), but also makes it difficult to manipulate the dough. Often, by the time you turn it into a sheet, the dough starts to heat up again and you end up in a sticky situation. Fortunately, there is a very elegant solution: simply roll the freshly mixed dough between two sheets or parchment paper, then place it in the refrigerator to chill. When it’s hardened, simply peel off the top sheet of parchment, cut out the holiday cakes, and bake as usual.
