Calibrate the Oven Before Thanksgiving
When you heat up the oven, the temperature is not always as stable as you would like it to be. There are probably hot and cold spots here that are easy enough to identify . However, the oven temperature may be too low initially. You might know this before Thanksgiving dinner.
Epicurious points out that a simple oven thermometer can help determine how hot your oven really is if you set it to, say, 350 degrees. For example, it might actually be 300 or 375. Temperature is critical, especially for baking, so you want to know if your oven is heating up properly. Some newer ovens come with calibration instructions for the correct temperature. Epicurious explains:
If you have a new oven and still have a manual, it is possible, even simple, as explained in the manual – with electric ovens and with some gas ovens, temperature calibration can be a fairly quick and simple process: you press a few buttons (electric) or you use a screwdriver to tinker with the temperature knob (gas). However, you first need to have an oven thermometer in order to know that there is a problem.
