Best Ways to Fix Thin Gravy As a Last Resort

Sauce is not the most difficult dish, but if your dish comes out a little watery, this is not what you need to add to potatoes and turkey. Here’s how to fix it, whether you have 30 minutes or one before it hits the table.

Bon Appetit has three quick ways to change the watery gravy, depending on how much time you have:

  • If you have 30 minutes … Toast another sauce and add too thin a gravy to it. Approximately 1 tbsp. each butter and flour will thicken 1 cup of broth.
  • If you have 10 minutes … Work 2 tbsp. butter at room temperature with an equal volume of flour in a separate bowl until a smooth paste forms. Stir in the gravy, whisking slightly, simmering slightly between additions, until it thickens to your liking.
  • If you have 1 minute … Mix 1 tbsp. each cornstarch and water to form a smooth liquid. Whisk in the sauce and let it simmer for a few seconds to activate the starch. Repeat as necessary.

If you have more than 30 minutes before the gravy needs to be on the table, simmer it over medium heat so that the liquid gravy will shrink and thicken on its own.
