Make the Cabbage Less Bitter by Massaging and Cutting Before Rinsing
Cabbage and other leafy greens are very useful to make after a massage, before adding them to a salad. But if the bitter taste of the cabbage bothers your taste buds, you can change your routine.
In this video from Wired on YouTube, Dan Souza of Cook’s Science and America’s Test Kitchen adds a twist to an old “massage cabbage” trick . Instead of rinsing leafy greens before massaging and chopping, rinse them after. Why? The massage helps to soften the cabbage, but it releases many bitter compounds with the slicing, which are not very pleasant to the taste. But if you save the rinse for later, you can wash off most of the bitterness that comes out. Now you don’t have to dress up your cabbage salad and deprive it of its health benefits.
