Roasting your own pumpkin for use as a pumpkin pie filling is tricky and inconsistent, as The Kitchn ‘s Megan Sploun explains. Pumpkins vary in size and moisture, so they don’t always give the perfect texture. Splawn recommends using canned pumpkin puree (rather than canned pie filling) instead. The trick, however, is to toss some into a blender or food processor and grind again before adding the spices.
