When buying a cast iron skillet, you can go in two ways: a “traditional” black skillet with no coating or a skillet with an enamel coating. To help you determine which pan is best for you, America’s Test Kitchen has created an excellent quiz.

Traditional cast iron pans take a little more work to get ready for first use and a little more TLC to maintain, but they are cheaper than their enamelled counterparts and can last forever if you handle them properly. That being said, there is nothing wrong with taking the lighter enameled route. The whole point of buying kitchen equipment is to use it , and if the enamel pan is more likely to be brought to your kitchen, then it may well be worth a little extra money.
