Peel the Tomatoes Quickly by Lighting Them on the Gas Stove
Whether you’re looking to peel a few tomatoes for a homemade sauce or gazpacho, all you need is an open flame and the tomatoes will peel off in no time.
If you need to peel a large batch of tomatoes, blanching them is more effective. But if you only need to cleanse a few, Serious Eats’ J. Kenji Lopez-Alt suggests just setting them on fire over an open fire. It is much faster. Use a knife to cut the bottom of the tomatoes with an “X”, then use metal tongs to swing the tomato over the gas burner on the stove. The heat from the flame will cause moisture under the skin of the tomato to evaporate, separating the skin from the meat of the tomato. The same can be done with a mini blowtorch. After you’ve set most of the tomato skins on fire, simply remove them under the cold tap water.
