Whisk the Dairy-Free Vegan Ice Cream With Coconut Milk
If you’re craving a creamy frozen treat but dairy isn’t part of your diet, you’re in luck. You can make your own vegan coconut milk ice cream.
Before you start, you will need coconut milk (about 28 ounces), some cornstarch (2 tablespoons), sugar (1/2 cup), vanilla extract (1 1/2 teaspoons), and some salt (1/4 tsp.) L.). Then, as explained in The Kitchn’s video above, start by dividing the coconut milk into two containers, one with three cups, the other with a half cup. Add cornstarch to 1⁄2 cup of coconut milk, whisk and set aside. Now heat three cups of coconut milk over low to medium heat, add sugar and salt and stir. Once the sugar has dissolved, add the cornstarch mixture and heat until thick (but don’t let it boil). You will know he is ready when he can coat the wooden spoon evenly. When it thickens, add some vanilla extract, stir and refrigerate overnight. Whisk it the next day in an ice cream or mixer, then let it cool for a few more hours before eating.
