Rejoice, Mochi Ice Cream Can Be Made at Home
A delicious mochi prides itself on being soft and chewy. Making such mochi is usually a laborious,cruel and rather dangerous process. This homemade mochi ice cream recipe doesn’t require risky jerks or pops; just sweet glutinous rice flour, sugar, water, ice cream and serenity.
Food52 recommends pre-filling a scoop of ice cream to put the mochi inside the package. The easiest way to ensure consistency is to take an egg carton, line it with plastic wrap, and place a scoop of ice cream in each rack. The size of a ping pong ball should be fine.
In the meantime, to make the mochi, you add sweet glutinous rice and sugar, then water and whisk everything into a gruel. The next part requires rapid heating of the mixture in the microwave and intermediate stirring. The goal is for it to appear translucent. And the fun begins after it cools down: it should begin to resemble the sweet softness of mochi, after which you cut it into circles and put ice cream there. Don’t put them in your mouth yet. They need to be frozen for a couple of hours and then thawed until blissful.
