Make Summer Caramel Sauce With Watermelon Juice
Rich, nutty caramel doesn’t mean “summer,” but made with watermelon juice, the sticky sweet sauce makes for a fruity, ripe, and vibrant dessert dessert.
Since watermelon is made up of water (yes) and sugar, it’s actually a pretty good starting point for caramel, and The Kitchn perfected the recipe (link below). Simply bring two cups of juice (strained from solids) to a boil and subtract for about half an hour, add half a cup of sugar and stir until dissolved, then continue cooking until it thickens. Let cool, eat, or store leftovers in the refrigerator for up to a week.
