Breadcrumbs may not seem like the most appealing thing to make in the kitchen, but this humble ingredient adds texture and flavor to every food it touches. To keep them bright and tasty, add some citrus zest.
Come to think of it, this is the perfect union of two things that you were going to throw away – I mean “compost” – anyway. Stale bread makes great crumbs, and lemon zest, devoid of juice, can still provide a lot of useful things. To use both of these potentially overlooked foods, finely grate the zest and mix with toasted, crumbly bread mixture.
