Use Unsweetened Whipping Cream for Particularly Tasty Salad Dressings

“You should pour whipped cream over your salad” may sound like a crazy proposition to me, but stay with me for a little while. While whipping cream is usually meant to be sweet rather than savory, it’s actually the perfect blank canvas for rich creamy dressings.

Chef Joshua McFadden of Ava Gene’s makes it by adding heavy cream to whisk with garlic, seasoning with salt and pepper, then adding a little olive oil and whisking until very soft peaks. Then he throws in some lemon juice and sprinkles it on a delicious gem salad with shaved carrots and roasted hazelnuts . You can stick to your recipe, or you can make your own and experiment with tons of different flavor profiles, just make sure you include something savory and some acid. Personally, I think lemon tahini would be great to drizzle over the grilled broccoli salad, but there is nothing wrong with making it very simple and just adding some dijon with salt and pepper.
