Make Simple Lebanese Garlic Sauce and Eat Anything
If you’ve ever eaten at a Lebanese restaurant, you probably liked tum , a fluffy white garlic sauce that’s usually served alongside delicious grilled meats. I assumed it was magic, but it turned out to be just garlic and oil.
While this is fairly easy to do, it takes patience . You just need a few common ingredients: lots of garlic (a cup of peeled cloves), some kind of neutral oil (4 cups), half a cup of lemon juice, and salt. Add the cloves to a food processor after removing any small green sprouts. Add a couple of teaspoons of salt and chop. Then you need to drop 1/2 cup of oil VERY SLOWLY while the processor is running. Scrape the edges and do the same with two teaspoons of lemon juice. Continue to alternate between butter and juice, periodically scrubbing the sides of the bowl. The emulsion will turn bright white and fluffy, at which point you should immediately stop and smear it with meat (or vegetables, or bread, or whatever, just eat it).
