Have you heard the good news about Halloumi? This hard cheese made from goat and sheep milk is so hard that it can be cooked directly in a hot skillet or on a grill rack without thawing, which gives new meaning to the term “grilled cheese” and makes one wet taco.
Whether you pan or grill it, you end up with a flavorful, caramelized outside and sticky melting inside, with a juiciness that goes well with fresh herbs, vibrant fruits and vegetables, and anything sour or pickled. You can use this cheese in a wide variety of ways, but I’ll follow Epicurious’s example and use it as a taco filling.
