Turn Leftover Fried Chicken Into a Super Flavored Salad
Poached chicken is usually the star of the chicken salad, but Lucky Peach has a recipe that uses cold, leftover fried chicken to make a super simple and delicious salad. (Extra point if it’s KFC chicken; whatever MSG means is good stuffed with minds.)
I know, I know, you’ve never heard of “fried chicken leftovers” because leftovers are for punks, but that’s too bad because cold fried chicken is second only to cold pizza. (I’ll seriously order too much so that there will be leftovers.) To turn it into a salad, remove the chicken from the bones and mix with mayonnaise (kyuppi recommended), diced apple, chives, lime and sriracha. Put it in your mouth and be happy.
