Use a Wilted Salad by Turning It Into a Refreshing Hot or Cold Soup
Salad is great for salads, sandwiches, and burgers, but once it starts to wither and lose its pleasant crunch, it stops being so tasty. Don’t throw it away, turn it into a delicious soup that’s good both hot and cold.
You can use just about any salad other than iceberg because it doesn’t taste too much. Put out any aromas you may have on hand (onions, garlic, leeks), then simmer in the broth for 10 minutes. Add lettuce and some greens, if you have them. After about a minute, stir everything in a blender with a little salt and lemon juice and stir until the soup is smooth.
If you’re adventurous (or need to clean up your pantry), try additives like bacon, cheese, a spoonful of sour cream or yogurt, chopped radishes, or roasted nuts. A thick, crispy piece of bread will turn it into a dish that can be eaten hot or chilled.
