Tomatoes are not the most hardy after picking, and when they start to tarnish and wrinkle, they need to be used quickly. If you have a tomato on the verge of turning, here’s an easy way to turn it into a versatile filling that can be added to just about any dish.
Cut the tomatoes in half, place them open side up on a baking sheet and season with salt. Bake at low temperature (about 300 degrees Fahrenheit) for several hours, until the tomato halves turn into chips. You can snack on the chips or put them in a food processor or blender and cook savory tomato dust in salads, popcorn, vegetables, or even main dishes just before serving.
