Add Feta Cheese to the Brine for a Tasty and Juicy Chicken
I usually prefer dry brine over wet , but I can change sides a bit to try the Feta Kitchen brine, which requires only two ingredients: feta (spirit) and water.
To make this cheese salty solution, you will need 2 ounces of feta and 2 glasses of water for every pound of chicken . Combine the cheese and water in a food processor (or you can use a blender ) until smooth and transfer to a resealable bag along with the chicken portions of your choice. Throw it in the refrigerator overnight and cook the bird any way you like. (If you don’t have a preferred method, The Kitchn will provide you with information from the link below.)
Alternatively, if you buy feta that comes in brine, you can use the liquid the same way instead of (horror) draining it down the drain. Either way, the result is a delicious, moist chicken with a salty, spicy and complex flavor unlike anything you’ve eaten before.
