Make Perfectly Thin Slices of Avocado by Slicing in Front of the Skin
Some people may advise you to cut the avocado in half and then scoop the meat off the skin before cutting it. However, if you want thin, neat and painterly slices, they should be cut before peeling.
As Sara Jampel of Food52 explains, scooping up before slicing will often end up with wrinkled and mashed slices. It’s also easy to leave a lot of flesh stuck to your skin if you don’t pick it up carefully. To avoid this, Jampel recommends splitting the avocado in half as usual and then slicing it before peeling it off. Place the avocado halfway on the cutting surface, the flesh down, cut as thin as you like, then gently peel the avocado from each slice. It also makes the slicing process safer, as you won’t be trying to grab the slippery flesh of the avocado.
