Cucumber Peel Can Be Used to Make a Delicious Sandwich Paste
I usually don’t bother peeling cucumbers for pickling, but in some salads (and cocktails) I prefer to have the skins off. Composting that pile of rind is great, but you can actually use it to make a delicious summer sandwich salat.
Think of it like a dab of a tea and cucumber sandwich. Simply mix half a cup of cream cheese, two teaspoons of Dijon mustard, and two cups of finely chopped arugula for each large cucumber peel. Season with salt and pepper to taste, stir well and put on a nice piece of baguette. Sprinkle prosciutto ham on top if you like.
