Blade Master Knife Sharpening Tip: Apply Appropriate Pressure
There is a big difference between moving a knife over a sharpening stone and sharpening it accurately. This is the pressure the blade maker recommends when you sharpen a knife with a sharpening stone.
Not applying pressure is one of the most common mistakes when sharpening knives, according to Certified Blade Master Bob Kramer. Kramer suggests you use four to six pounds of pressure for the knife against the shape, and about eight pounds of pressure for a really dull blade. If you’re not sure what it looks like, press down on the scale until it shows the correct weight, and apply the same pressure to the knife as you sharpen it.
