Anyone Can Make This Butter Sauce With Two Ingredients

Butter is great for vegetables and everything else. However, when you just melt the butter, it loses its creaminess. You can keep this creamy consistency with a simple two- ingredient sauce known as beurre monté.

Okay, one of the ingredients is water, so we’re mainly dealing with oil. In fact, it is more of a method of converting butter into a sauce. As Kitchn notes, beurre monté is simply a French term for oil emulsified in water. When we heat oil, we break down its components: oil, fat and water. But with this method, you whisk the cold butter with hot water while it melts, maintaining an oily emulsion.

Kitchn explains how this is done:

First, heat a few tablespoons of water in a saucepan. When it boils, reduce heat to low and slowly beat the cold butter cubes about a tablespoon at a time until the water and melted butter are emulsified into a smooth, creamy, thick sauce. Be sure to keep the heat low – if the sauce comes to a boil, it will stratify. Use it immediately or keep it covered on the stove over low heat until ready to use.
