Make the Perfect One-Minute Hollandaise Sauce With the Hand Blender
The traditional way of making Hollandaise sauce can be a test of time, but it takes a lot of effort and is easy to spoil. If you have an immersion blender at home, here’s how you can make perfectly creamy Dutch every time and in no time.
In addition to the traditional hollandaise sauce ingredients (egg yolks, water, salt, etc.), you will need a hand blender, a glass measuring cup, and a cup that is barely wider than the head of your hand blender. In the video above, J. Kenji Lopez-Alt shows you how to use this technique, but if you can’t watch it, here are the basic steps:
- Combine egg yolk, water, salt and lemon juice in a hand blender cup.
- Using a hand blender, slowly drizzle melted butter from a glass measuring cup into a cup.
The hot butter boils down the egg yolk as you mix everything together, resulting in a creamy-rich sauce. You should serve the sauce as soon as possible until everything is emulsified before it cracks or splits. Since this trick takes about a minute, you can do it just before serving.
