Why You Should Preheat Your Multicooker Before Adding Ingredients
Some multicooker recipes require you to fry the ingredients beforehand to release the flavors. To preserve the flavor, preheat the multicooker while simmering.
At The Kitchn, Chef Neela Panise explains the reasons for preheating:
“… as I tested more and more the recipes for my cookbook, I found that the inclusion of a slow cooker to preheat while roasting aromatic foods had its advantages. Then I added a hot dish to a hot one instead of starting over, “she says … When you put hot ingredients in a cold multicooker, everything has to heat up again, which can lead to additional costs. Cooking time 15 to 20 minutes …. Instead, while you cook the flavors, turn the slow cooker over high heat to heat up quickly, then reduce it to the appropriate temperature indicated in the recipe when you add all the ingredients.
