Make Silky Cornstarch Take-Out Egg Soups at Home

Egg drop soup may seem like one of those magical things that can only be obtained at your favorite take-out cafe, but in fact it is amazingly easy to make at home. Getting a silky texture is a real trick, but all you need is some cornstarch.

Once you’ve made the broth ( this recipe covers all the flavor bases), you need to prepare the gruel with 1 tablespoon of soy sauce + 1 1/2 tablespoons of cornstarch . Whisk this with about six cups of broth and simmer until thick, about two minutes. Beat a few eggs with a little sesame oil and slowly pour into the hot soup, whisking constantly to form these delicious thin strands.
