Chop the Potatoes Into Triangles for the Best Mashed Potatoes
Creamy, delicious mashed potatoes make a great side dish any time of the year, and Alton Brown has a secret to making yours better: Chop the potatoes into triangles before cooking them.
Even though Alton’s video above is about Thanksgiving, you can use this technique anytime you are in the mood for mashing. After you’ve washed and peeled the potatoes, cut them into half-inch slices. Fold three slices so that the end is on top. Cut in half, then flip over and cut in half again (so that each piece is divided into four pieces). Remove the ends and cut into quarters of the large slices into sixths, cutting diagonally through the center of the slice. You will end up with a bunch of triangular pieces that cook more evenly and result in a tastier mashed potato. Alton does not tell us about his preferred method of cooking the potatoes, but we believe boiling will work as usual. Watch a video demonstrating this technique.
