You want them nice and fluffy, and you make essentially a huge 9×13 baking dish full of eggs and then cut them out with a cookie cutter or jar lid to get the circles that will be on your sandwiches. From there, cook thick sliced bacon (but not too hard so that it doesn’t turn leathery when you heat up the sandwich) and collect it whole. Wrap it in foil (or parchment paper, if you like) and store it in an airtight bag in the freezer until you need it.
