Turn Almost Any Boring Protein Into Delicious Food With Piccata-Ing
You’ve probably eaten chicken piccata, but this delicious hot sauce can add a touch of flavor to any protein that goes well with white wine and lemon, including vegetarian options like tofu or white beans.
Prepare the protein of your choice (click on the link below for suggested preparations) and prepare the sauce for the skillet by sautéing some shallots or onions in one or two tablespoons of oil. Add some stock. Food 52 recommends 1/3 cup for two, but need not be specified; extra sauce is not a problem. Add lemon juice, a sip of healthy wine, and as many capers as you like. Let it all boil while you cook the starch (pasta, potatoes, all good).
Taste the sauce and adjust as needed. Add more wine, lemon, broth, or salt and pepper if needed. When it’s perfect, add the protein again and let everyone get to know each other for a couple of minutes. Add some fresh parsley and serve.
