Make Light and Delicious Cold Noodles With This Simple Soy Vinaigrette
Delicious sauce is the key to a great noodle dish. While this soy vinaigrette is made for cold noodle dishes (specifically cold ramen), it’s a very quick way to turn a bowl of any leftover noodles and vegetables into a tasty and satisfying meal.
Chef Richie Nakano shares his recipe for soy vinaigrette for cold ramen, but you can use it for most Asian noodles. You don’t need much: soy sauce, vinegar, sesame oil, and some fresh garlic and ginger. You probably already have most of the ingredients in your pantry, and you can see exactly how it’s done in the video above or in the link below.
Toss everything in a blender, then strain the ginger and garlic. Drizzle over cooked noodles, vegetables, meats and other toppings you want. If all you have is leftover noodles, that’s fine too. If you want to cook noodles for it, just make sure you chill the noodles in an ice bath after cooking them al dente (this stops the cooking process and chills them evenly for the dish), but before adding them to everything else.
