Sharpen Less Expensive Knives With Just a Few Pieces of Sandpaper
While you might be better off sharpening your really good knives with waterstone, you can easily sharpen less expensive knives with multi-grain sandpaper.
In this video from Paul Sellers’ YouTube channel, Sellers demonstrates how to sharpen knives neatly without any complicated equipment. All you have to do is glue the various grit sandpaper to small pieces of wood. Once you’ve done them, simply take a chopping board or book, place your knife on top of it with the cutting edge of the blade outward, and begin to sandpaper in a circular motion along the blade. Start with coarser grit, then gradually work down to finer grit to finish. To make the process a little easier and to keep the knife very sharp, you can also use the “pointed trick”.
The sandpaper method is probably not ideal for very good cutlery, but it is great for sharpening utility knives, pocket knives, and dozens of kitchen knives. Vendors also recommend using diamond spatulas if you don’t want to use sandpaper. If you’re worried about ruining your blade the first time, start with a knife you don’t need to practice.
