Freeze Cranberry Sauce and Gravy for the Best Thanksgiving Croissants

Thanksgiving stuffed croissants are a great way to use up extra gravy, turkey, and cranberry sauce, but rolling the gravy in the dough can be a little tricky due to the nature of the liquid. To prevent the filling from spilling, it must be refrigerated before heating.

Momofuku Milk Bar, an establishment that produces ten thousand seasonal pastries every year, has perfected the art of Thanksgiving croissant. To prevent the gravy or cranberry sauce from leaking out, the chefs at the Milk Bar freeze both ingredients before wrapping them in puff pastry along with the turkey. This will hold everything together until the dough is proofed and baked, providing a nice moist filling that doesn’t leak all over the place during cooking. Besides Thanksgiving, this tip can be used to stuff your pastry with any juicy or soup ingredient. (I think a French onion soup croissant with provolone and parmesan would be very good.)
