Baking a pie from scratch can be tricky, but in this video from America’s Test Kitchen YouTube , Chef Ashley Moore shows you how easy it is to achieve the perfect pie crust. It all comes down to three simple tricks:

  1. Use the perfect balance of oil and fat (you may need to tweak the ingredients to suit your preference).
  2. Set one cup of the recipe flour aside. Combine the butter and fat with the remaining flour, then combine in the cup you placed later.
  3. Use vodka instead of water to avoid a hard, leathery crust.

Vodka works so well because it is made up of 60% water and 40% ethanol, and less water means less gluten, which will strengthen your crust. However, keep in mind that although most of the alcohol will burn off in the baking process, this should still be avoided if you have an alcohol allergy or alcohol intolerance.
